This is the most popular Okra variety. The vigorous 5-foot-tall plants produce straight pods that can be served fried, cooked, or pickled. They are at their best when they measure 3 inches long.
Okra thrives in warm temperatures, so you should start your seeds indoors 3 to 4 weeks before the last expected frost in your region. Before planting, soak the seeds overnight to promote germination. Plant 2-3 seeds per pot and choose the strongest one as the plant grows. Once all risk of frost has passed, plant them in full sun about 12 to 16 inches apart. When the plants reach a height of about 4 inches, add mulch around their base to retain moisture and control weeds.
Emerald Okra is at its optimal taste when it measures approximately 3 inches, and it can tolerate cooler temperatures compared to other varieties.
