If you live in a cold climate region, start your amaranth seeds 6 to 8 weeks before the last expected ground frost. Otherwise, sow them directly in the garden at a depth of 1/4'' and space them 18 to 24'' apart to give them enough space to grow. Germination should occur within 8 to 12 days.
Amaranth loves well-drained soil and full sun exposure. It tolerates drought well, and once established, it's preferable to water only during dry periods; too much moisture can cause diseases. Each plant produces up to about 100,000 seeds, so it can become invasive if allowed to spread in a warm climate. This plant attracts butterflies and bees and adapts well to hanging pots.
The leaves can be eaten like spinach, and the seeds, which resemble those of quinoa, can be harvested as soon as the plumes begin to dry and color. To harvest the seeds, remove the heads when they are ripe and hang them upside down in a place sheltered from direct sunlight for at least 10 days. Once completely dried, shake them to collect the seeds in a container.
