Giant Spinach is a bit sweeter than regular spinach and offers a slightly longer harvest period. It can be consumed fresh, cooked, frozen, or preserved.
It is best to let spinach grow in cool weather; they can even survive temperatures below freezing if protected. As soon as the soil is workable in spring, you can sow them directly in the garden at a depth of ½ inch and 2 inches apart. You can ensure continuous cultivation by sowing new seeds every two weeks until the summer heat sets in; spinach seeds go dormant when the soil temperature reaches 80°F (26°C). They appreciate shade, so it's possible to plant them at the base of larger plants.
It is important to keep the soil moist as an imbalance in water supply can cause the plants to bolt; applying mulch can help control this factor.
Harvesting spinach leaves can begin when they are large enough for your taste. Start by harvesting the larger leaves on the outer part of the plant or cut the entire base of the plant, and new leaves will grow.
